Title: Fish Steaks with Pear Jardiniere

Yield: 4 Servings

2tsVegetable oil
1cOnion, thinly sliced
1cCarrot; julienne cut
1/2tsDry mustard
1/4tsEach: basil, crumbled and
  Dill weed
2 Fresh Bartlett pears; cored,
  Quartered
1 1/2lbFirm fish fillets (sea bass,
  Haddock, salmon)
2 Tomatoes; sliced
1 Lemon; thinly sliced

Heat oil in large nonstick skillet. Add onion and carrot; stir to mix well. Cover and cook slowly 5 to 10 minutes. Mix mustard, basil and dill weed. Toss with pears. Add fish fillets, pears [sic], tomatoes and lemon slices. Cover; simmer 10 minutes or until fish flakes easily with a fork. 4 servings.
